The trinity knot is believed to represent the trio maiden, mother, & crone (wise woman). It was later adopted by Irish Catholics as a representation of the Holy Trinity, and is also said to mean a number of other things: past, present & future; land, sea & sky; mind, body & soul. We may never know exactly what the ancient Celts intended, but we do know that it's a symbol that's survived since the 7th century. Maybe what matters most is what it means to the wearer, whether it's religious, spiritual, philosophical, intellectual or simply for fun or for its aesthetic.
